The milk from the dairyfarmers is collected by the cooperative itself . To keep the product as pure as possible, the milk is not pasteurized, but
processed as untreated as possible. It goes without saying that no flavourings, colors or preservatives are added.
Natural salt bath
No salt is added during cheese making. The cheese is briefly brined in a bath of spring water with sea salt. Both naturally contain trace elements and minerals that benefit the taste and ripening of the cheese .
